
Easy and Simple Vegan Grilled Cheese and Tomato Sandwich
I grew up eating Grilled Cheese, it’s a call back to simpler times. Grilled Cheese after school, with tomato soup on the side for dipping.
This, of course, was before I knew I could not have dairy.
So this sandwich is an ode to those simpler times, updated to be dairy-free and easy as can be.
The key to a good grilled cheese is the cheese. And when you’re eating vegan cheese, that can be a big challenge.
I’ve tried multiple cheeses, and the Violife cheese slices melt like real cheese and have a flavor that is very close to the real deal.
Why Tomatoes?
This is my ultimate tomato soup hack. Put the tomatoes in the sandwich and the flavor is reminiscent of those days after school, and you don’t have to make a pot of soup!
Ingredients
Just four ingredients. That’s the beauty of this recipe. You can throw it together at a moments notice with just a few items.
Butter – Any plant butter will do, but Country Crock Plant Butter is an amazing substitute for dairy butter. We highly recommend it.
Tomatoes – At Wolfe Acres, we grow cherry tomatoes, so that is what I used, but you could easily swap in a larger tomato variety.
Vegan Cheese – I’ve tried multiple cheeses, and the Violife cheese slices melt like real cheese and have a flavor that is very close to the real deal.
Bread – This comes down to personal choice, I use potato bread.

How to Make a Vegan Grilled Cheese and Tomato Sandwich
Step 1: Cut your tomatoes into halves and set aside.

Step 2: Set a pan to medium heat on your stovetop.
Step 3: Put half of your plant-based butter into the pan and cook until the butter is completely melted.
Step 4: Place a slice of bread onto the pan, directly onto the butter. This method is a hack to remove the need to butter your bread before frying. Told you it would be easy!
Step 5: Lay on your slices of vegan cheese, place your tomatoes on top of the cheese slices, then finally top with a slice of bread.

Step 6: Cook until the slice of bread touching the pan is golden brown, about 2-4 minutes
Step 7: Add the other half of plant-based butter to the pan and then flip and cook again until the other side of your bread is golden brown, about 2-4 minutes.
